his baked or smoked brinjal(eggplant) thogaiyal (chutney) is an heirloom recipe. This is a south Indian version of Baingan ka Bhartha in the sense that both the dishes have smoked brinjal as base. Makes a great meal when mixed with hot rice , sesame oil and served with papad. This can also be served as a side-dish for idli/dosa Ingredients: 1 big eggplant Urad dhall - 1 table spoon Red chillies - 3 medium Tamarind - lime size ball Salt to taste Oil - 3 tsp Mustard - 2 tsp Hing a pinch...

GuttiVankaayi or Stuffed Eggplant/Brinjal curry is Andhra special curry. This dish can bemade with the small purple brinjals. But you need to make sure that the brinjals areabsolutely fresh, shiny and tender(the seeds shouldn't be black) without a dried withered look. This dish tastes good only if the brinjals are fresh young and tender. Its very simple to cook. My cooking method may be new to you but the results are way better. Microwave cooking process makes it fast with less oil and the brinjals...

I didn't always like the taste of smoked brinjals. I love brinjals otherwise, but this one method of cooking was never a favourite. If Amma wanted to make thogayal/thuvayal, she would steam the brinjals in the cooker. Now, I have come to appreciate the flavour a lot more. When Amma was here sometime back, she made this Baingan Bharta. Even my Punjabi colleagues said it was to die for. 1 large Brinjal, roasted on an open flame 1 Onion, chopped finely 1 Tomato, chopped finely 1 tsp Ginger Paste ...

This is one of my mother's authentic recipes for variety rice, liked by everybody who tastes it. I would definitely not classify this recipe as a very healthy one as she uses a lot of oil. When I protest against her for using so much of oil, she reverts back saying "If you don't eat such stuff at this age, when will you?". I know its not a very good argument, but I generally give up as I too want to savour her delicious food. Once she goes back to her native, she will also follow a strict diet plan as b...

I learnt this recipe from my mom. We call this recipe , “Kathrika Sabji”. After coming to the U.S., I heard from my friends there is another name for this recipe. It is often called “Kathrika Gotsu”. This recipe is the best accompaniment with idlys and dosas. I like this recipe for the tangy flavor. Here goes the recipe!! Ingredients 3-4 Eggplants1 Onion or 10 pearl onions finely chopped1 tomato finely chopped4-5 red chilies1tsp of ginger-garlic paste¼ cup tamarind extract½ tsp turmericSalt for taste...

cut the green onions small in size. - chop the tomato to small pieces -make as paste of ginger+green chillies+garlic. We wont be using red chilli powder. -wash the eggplants and wipe it with a paper towel. -do not take off its stem - this will help you hold the eggplant while roasting. -brush it with oil(with your hand) and make few piercings using knife. -roast the eggplants(one at a time) on the gas burner(put a small grill to give the eggplants a surface.....

Baingan bharta I think is one of the tastiest dish that can be made from Baingan(eggplant/Brinjal). I love its unique smoky flavor that comes when you grill/roast it and then it is peeled and mashed and mixed in onion tomato masala... oh heaven :). It tastes best if roasted on open flame on a gas stove but if you don't have one you can always broil it in the oven. Ingredients- Eggplant - 1 bigOnion - 1 medium(chopped)Tomatoes- 2 medium(chopped)Green chilies- 2- 3 chopped(seeds removed)Salt- ...
