the footloose chef: Carrot chutney with adai dosai

Made 'adai dosais' for breakfast today. Adai dosai, for those who aren't familiar, is dosa (crepe) made with a variety of lentils and a portion of raw rice. I don't like the traditional combination of 'avial' with adai and so make different veggie chutneys to go with it. Saw this colourful recipe in Mallika Badrinath's Vegetarian Curries recipe book and decided to make a go at it. It came out really good and was excellant when paired with adai. Feeling extra good about the perfect carb-protien combo wit...

Adai dosai is a common breakfast / dinner item made in South Indian houses. we make it in many ways using many kind of lentils. The following recipe is an authentic one followed by people of Tirunelveli. My mom used to make it for saturday mornings. (Sundays were devoted to Poori). I don't even know when she would have got up or when she would have soaked them all..(Yes , it is the secret of mothers ). But those memories are really wonderful and the best part is , this was her favorite breakfast cum ...

Adai is another one of those south indian delicacies and probably a well kept secret too. It tastes great and not that hard to make it too. The batter has to be coarse to get the right crispy texture. I use to make adai at least once in a month. It pairs best with coconut chutney and avial , the rich flavor from curry leaves and red chillies is just mouth watering! Or if you are like me just eat every bite with a little bit of sugar and I can promise you heaven.

Adai brings back the memories of my childhood. I like the combo of adai with butter; the mix of spiciness and butter really tastes good. I think each family has their own proportions to make this recipe. I learnt this recipe from my mother. This recipe is also healthy, since it is made of different lentils. Here it goes:) Ingredients 2 cupsrice¾ cuptoor dal ¾ cupchana dal 1tsp of urad dal2 red chilies¼ tsp asafetida10 pearl onions finely chopped½ turmeric½ tsp gi...
